Ask a local about bánh canh (thick, chewy noodle soup) and you will hear different home towns, because the dish came to the mountain city with several waves of settlers. One shop is run by a family from Quảng Trị who present it as a Bình Trị Thiên speciality; one food street belongs to families from the old imperial capital who settled in the sixties. Below: how the styles differ, then three shops chosen by the hour you want to eat.
Bánh canh in Pleiku: the styles
There is no single Pleiku recipe, because each shop brings the cooking of the owner’s home town. At O Bé, at 85 Phan Đình Giót, Ms Nguyễn Thị Như from Quảng Trị makes the noodles entirely from rice flour and cooks the broth with snakehead fish. Huế-style snakehead bánh canh, by contrast, uses wheat flour rather than rice flour for the noodles. If you have eaten Bình Định fish-cake bánh canh, you will meet a third style: noodles of rice flour mixed with wheat flour, chewy and clear, in a broth of bones and fish heads with a light, clean sweetness, topped with fish cakes that are either fried or steamed.
It is also an old, everyday dish here: for several decades the bánh canh of Cô Hồng and Bà Bích has been familiar to people in Pleiku. A long-running shop of that kind has a naturally sweet broth and soft, chewy, smooth noodles served with steamed and fried pork roll, in a cramped room with a few old wooden tables that is clean and cosy. For another Huế-rooted food street, walk Nguyễn Đình Chiểu street: only about 320 m long, but known as a food street with many long-established, inexpensive shops.
How snakehead bánh canh is made and served
The big difference is the broth and the fish. At O Bé the broth is simmered from snakehead bones and heads, the fish meat is boned, stir-fried and put straight into the bowl; seasonings such as fermented fish sauce, chilli powder and shallots are fried until fragrant and adjusted at the table. The noodles are rice flour, so the bowl does not feel heavy, which is the shop’s strong point.
In the Huế style the fish is steamed just until cooked, boned and stir-fried until golden. Bones and heads are simmered and skimmed again and again so the broth stays clear. It is served with noodles in the bowl, a shallow ladle of broth, pieces of fish laid on top, then spring onion and coriander, ground pepper and sliced chilli. Shrimp paste (mắm ruốc) is the signature of Huế flavour, while the overall taste stays balanced, not too sweet or too salty.

Three shops, chosen by the hour
The three shops differ mainly in hours: O Bé is for an early breakfast, Quán Bánh Canh 32 for lunch or dinner, and Cô Bông for the afternoon.
Mì Gà - Bánh canh cá lóc O Bé

For central-Vietnamese snakehead bánh canh first thing in the morning, go to O Bé. It serves Bình Trị Thiên specialities with the stronger, saltier taste of central Vietnam. Besides bánh canh it sells mì Quảng (turmeric noodles) with snakehead. Expect a clear broth with plenty of herbs, eaten with rice crackers on the side.

Quán Bánh Canh 32

Quán Bánh Canh 32 is the one for bánh canh outside breakfast time, lunch or dinner alike. A bowl was 20,000 VND in April 2026, and two bowls with drinks came to 72,000 VND in March 2026, with chewy tapioca noodles.

Bánh Canh Cô Bông

Hungry in the late afternoon? Cô Bông is the one to remember. A regular found the broth a little mild at lunchtime, fixed with a dash of fish sauce, and richer after 4 pm, so a later visit suits it better. The same regular praised the sweet fish cake, the unfishy pork dumpling, the tasty beef balls and the soft-stewed bones, and says the noodles come in two kinds, wheat and rice, with the wheat noodles chewier; say “Cho tôi bánh canh bột mì” for wheat or “bột gạo” for rice. The shop’s own touch is chilli satay with crisp pork crackling. It is busy and clean, and diners call it cheap, though no price is given.

Which shop for you
Choose by hour first, then by dish. Up early and fond of central-Vietnamese snakehead bánh canh? O Bé is the earliest of the three. Missed breakfast? Quán Bánh Canh 32 serves straight through to 10 pm. Hungry mid-afternoon? Cô Bông takes over at 2 pm. Quán 32 is not open before 8 am (7:30 on Tuesday and Saturday) and Cô Bông is afternoon only, so check the card above before you set out.
Once you have had your bánh canh, look at breakfast in Pleiku, try phở khô in Gia Lai or the Pleiku specialities; the whole section is in Food and drink.
